Phenol-enriched olive oils improve HDL antioxidant content in hypercholesterolemic subjects. A randomized, double-blind, cross-over, controlled trial.
The aim of this study was to ascertain whether virgin olive oils enriched with (a) their own phenolic compounds and (b) their own phenolic compounds plus complementary ones from thyme could improve HDL status and function.
