1/2 cup extra virgin olive oil
1/2 to 1 teaspoon dried basil or oregano
1 small can black beans, drained and rinsed
1 small can corn, drained
2 cups chopped tomatoes
2 cups diced green pepper
Optional: 1/2 teaspoon red pepper flakes
1. Put the extra virgin olive oil and the basil or oregano in a bowl.
2. Add the red pepper flakes if you are using them.
3. Add the rest of the ingredients and mix gently with a fork; season with salt and pepper.
