Many people think you can’t cook with extra virgin olive oil (EVOO) – however this is not true. In fact, it is one of the safest and healthiest oils to cook with.  This resource takes you through a study conducted by a laboratory, where common cooking oils were heated and various end points were measured to test which was the most stable.  Extra virgin olive oil proved to be the most stable at high heat and when heated for a prolonged period.
